Culinary Professionals and Hobbyists greatly benefit from learning techniques to create regional haute restaurant style creations that honor the vast cultures represented on the Mediterranean Sea. Students will explore and create cuisine from Southern European countries and Northern African. Coastal’s Chef Marcinda will demonstrate and teach the students to explore and prepare classic and contemporary Mediterranean dishes which are flavorfully created and uniquely presented. The menu will be based on vegetables and seafood in season. Students will use fresh vegetables, herbs & spices, and olive oil to create unique side dishes; prepare whole grains and legumes such as couscous, polenta, risotto and rice and more. Formalization of cookery and presentation is the framework for this course.
